Today I want to share with you how to make Smoky Chipotle Butternut Squash & Cauliflower Soup with Mushroom Burgers. There will be a few steps you need to take, but it’s not as complicated as you might think.
Slice the onion. Cut up cauliflower and squash. Saute onions in olive oil until caramelized. Remove half of the onions and set aside. Add squash and cauliflower to the pot. Add seasoning. Stir and cook until veggies start to brown. Add water and veggie base. Bring to boil.
Cover and turn the heat to low. Simmer until veggies are soft. Mash the veggies and blend with an immersion blender. Add one cup of buttermilk. Taste and add last seasoning.
For Swiss Mushroom Burgers slice Swiss cheese into thin slices. Clean mushroom caps out. Coat both sides with olive oil. Add some balsamic vinegar, salt and pepper to the inside part. Place on medium hot pan inside side down.
Cook for 2 minutes. Turn over and cover with sautéed onions and cheese. Place under broiler until cheese is melted.

2-3 cups cauliflower
4-5 cups cubed squash
1 large onion
1 tblspn olive oil
1 cup buttermilk
1 tblspn veggie base in 4 cups of water
2 tblspns cumin
1 tblspn smoked paprika
1/2 tspn chipotle pepper flakes
2 burger buns
2 portabella mushroom cups
