French Onion Soup

french-onionFrench Onion soup is loved by many in Montana and it’s easier to make than most soups. It’s time for you to learn how to make it at home. First, open a bottle of white wine and set aside half a glass to add to your soup later. You can drink the rest, no one will notice.


Cut up crusty bread. Toss with olive oil, salt, pepper, and granulated garlic. Toast or bake until browned. Set aside.


Dissolve chicken & beef base in hot water (4 cups). Peel and slice onions and shave a carrot. Add 1 tablespoon of olive oil and 1 tablespoon of butter to a pan on medium heat. Add onions, carrots, and spices. Cook until very well done, about 20 minutes.


Add broth and wine. Bring to boil.

Fill 2 small bowls with soup. Top with croutons. Place slices of cheese on croutons. Sprinkle parmesan on top. Put under broiler for a few minutes until cheese is well melted.

Time: 40 min

1 Tablespoon dried thyme
1 teaspoon granulated garlic
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon nutmeg
3 large onions
1 carrot
1 Tablespoon beef base
1 Tablespoon chicken base
4 cups water
olive oil & butter for sautéing
1/2 white wine
2oz Gruyere or Swiss cheese
1oz Parmesan Cheese
1/4 bread with crust
