Here is something extremely easy you can make tomorrow. As requested by Pam and right in time for Sunday. These nachos are for two, so if you decide to stay home to watch the Super Bowl, or if you don’t care about it at all, then just make these for yourself to celebrate Sunday Funday. The hardest part about making these nachos will be dicing a tomato, chopping lettuce, and slicing green onion and avocado.
Once you’re done with that difficult part, make two layers of chips, black beans, olives, jalapenos, and cheese. You can use any kind of cheese you like of course, but I like to mix it up.
Put in hot over at 425 for 10-15 minutes until cheese is melted. Top with lettuce, tomato, onions, and avocado. Serve with sour cream, salsa, and a glass of wine.
Nachos for 2
Time: 20-25 min
4-5oz tortilla chips
1/2 can of black beans
1/2 4oz can sliced black olives
4 green onions
1 diced tomato
1 cup chopped lettuce
3 shredded cheeses (pepperjack, cheddar, parmesan)
1 avocado sliced
sour cream or yogurt
